The flu strikes again! This week has been a lot of rest, sneezing and couch time.  Thanks to my mom’s random surprise care package, I’ve had plenty of my favorite word searches to work on. I typically only do word searches when traveling but being sick this week has made me make an exception.  Along with word searches, I’ve maxed out on TV time and have watched more Fixer Upper than I care to admit.  But…. yesterday and today have been much better and I am (knock on wood) almost better!

Last weekend, I got to be a wedding guest! John and I had so much fun at his cousin’s wedding and loved celebrating with his family. Not only did we manage to get John’s parents and brother on the dance floor, we also all had a great time in the photobooth.  I don’t think I’ll ever be able to look at the pictures we took and not laugh!

Trader Joe’s Finds.

One of my favorite parts about where we live is that there’s a Trader Joe’s less than 3 minutes from my house! I typically shop for most groceries at Jewel but lately I’ve been loving specific Trader Joe finds.  As pictured above, recent obsession… crunchy salted peanut butter from there.  I put it in my greek yogurt with a little bit of honey and it is SO good! Also pictured, sweet potato gnocchi. I saw this online from someone else and gave it a try.. amazing.  It takes less than 10 minutes to make and tastes like a homemade meal. Another one of my favorites that I didn’t picture above is their Roasted Plantain Chips. I eat them with guacamole, salsa, hummus… pretty much any kind of dip. I wasn’t hungry before I started writing this but now all I want is one of these goodies.

Yayayaya! I get to see three of my favorite humans this weekend. This year, we’re celebrating Easter in Lexington, KY where my sister attends University of Kentucky. John and I are headed there Saturday morning and my parents will also be joining. I’m so excited to spend the weekend with my family. Oh, and since I mentioned I was hungry after that last topic.. I can’t wait to get The Local Taco with my sister! John has never had it so I can’t wait to introduce him to their amazing queso.

Since it’s final four games this weekend, I am sure my family will be hanging out somewhere on UK’s campus drinking beer and watching basketball…. if only UK was in the final four!
